What’s needed:

  • 1
½ Tbl. Soybean or olive oil
  • 2
    ½ tsp. Salt
  • 1
    ¼ tsp. Black pepper
  • 5
    oz. Ground turkey
  • 4
    oz. Fresh baby spinach

⅓ tsp. Salt ¼ tsp. White pepper

  • 1
    tsp. Minced garlic
  • 2
    tsp. Olive oil
  • 2
    Tbl. Greek yogurt
  • 1
    Large wheat or poppyseed roll
  • 1
    Tbl. Sriracha

½ tsp. Each, garlic powder, onion powder, cayenne pepper, parsley or basil ⅓ c. Shredded Jack cheese

As you may or may not have guessed, the topping for this delightful burger is another retro diner style throwback, creamed spinach, just slightly updated.

To start that, in a large skillet over medium-high heat add the olive oil and let it heat up for around 2 -3 minutes. When the oil is hot, drop in the garlic and cook for about 1 minute or so until it smells fragrant then drop in the fresh baby spinach, and stand back because it is going to sizzle at you a lot! When it’s done with its sizzle, season with the rest of the salt and white pepper.

You only want to quickly saute it for 2 -4 minutes or until it has wilted and released its water. When you feel confident it’s drained, place it into a strainer and press down on it with a spoon or a like to get any extra moisture in there. Then transfer your spinach to a bowl, and whisk in the yogurt, and half of the shredded cheese. Now set your updated classic creamed spinach aside for now.

In preparation for the burger, it’s a good idea to toast your bun, if you like that sort of thing.

For the burgers, mix together the sriracha, the ½ teaspoon each of the seasonings and ground turkey. Once thoroughly combined, make yourself a hearty 5 ounce patty. Once the patty is formed, take a large skillet again, and heat a drizzle of oil over medium high heat.

Once the pan is hot, add the patty and let it sizzle. Cook it for 4 -5 minutes on each side, flipping once. During the final minute of cooking is the best time to add the rest of the shredded cheese to melt on top of the burger. Before the burger hits the bun, evenly spread your creamed spinach mixture on to the inside of each bun, that way it stays put when you take a bite and is even.

Once your burger is completed your fries should be ready to come out of the oven and you are ready to eat while others must stay green with envy!
